Neuburger EXEMPEL 2016

 

Soil: sandy, gravel with lightly limestone and iron conclusions

Harvest: picked by hand,  12. of september 2016

 

Vinification: 7 days of skin maceration with spontaneously fermentation, malolactic and Battonage for 9 months on the yeast in 500lt used oak barrels

 

Alcohol: 12,5 % vol. Residual sugar: 1,2 g/l Acidity: 5,7 g/l

 

Without adding yeast the juice start spontaneusoly with the fermentation. 9 Months on the fine yeast give the wine the energy for a long life.

 

Trying to maintain the purity in the bottle we just gave a little amount of sulfur to protect during the process of botteling.

 

 

We resign the filtration process to enlarge the verity in the bottle.
