Harvest: Handpicked, September 2020

Vinification: spontaneous fermentation in 500lt wooden barrels. Cooler fermentation temperature at 25-27°C. Storage on full lees for 5 months.
Aged in 1000lt amphora.

Bottled unfiltered. The light lees give the wine enough energy to age perfectly in bottle for several years.

Alcohol: 12.5 % vol.

Residual sugar: 1.0 g/l
Acidity: 5.0 g/l

Organic status: produced biodynamically according to Respekt, certified by AT-BIO-402
